Beef Processing & Info
WHEN TO EXPECT YOUR BEEF
Our beef is processed only once a year from early to mid summer. After your beef goes to market, you can expect it to be ready in approximately 2 weeks. Place your order early as we only have limited annual supply.
HOW MUCH BEEF TO EXPECT
If you ordered a half you can expect to receive about:
2 Rump Roasts, 3 Tip Roasts, 12 Chuck Roasts, 12-14 Ribeye, 10-12 New York Strips, 5 Sirloins, 6-8 Tenderloins, 160-180 lbs. of lean burger, 1 Brisket, 1 Flank Steak, 1 Skirt Steak
When calculating for freezer space, allow for 6 cubic feet for a half beef. Chest freezers generally use space better than upright freezers.
NEED HELP ON WHICH MEAT CUTS TO ORDER
Download this guide for details on select cuts and to see a sample of our own personal order form for how we process beef for ourselves or contact the Baraboo Meat Market.
Meat is sold by hanging weight. This is approximately 60% of live weight. We estimate that our steers will weigh 1,400 lbs., which would be 840 lbs. hanging weight. We charge $3.00/pound of hanging weight.
Baraboo Meat Market's average processing fee is $0.60/pound (depending on the cuts of meat you choose), plus a $80 processing fee. Download The Meat Market's processing fee guide.
With these prices in mind, the total estimate you could expect to pay, to Gavin Farms and The Baraboo Meat Market is: $835: quarter, $1,670: half, $3,340: whole.
You will make two separate payments:
1. Cost of Steer: Gavin Land and Livestock
2. Cost of Processing: Baraboo Meat Market
