Blue Cheese Coleslaw

Nearly every time we smoke a brisket, we make this side to go with it. It’s also one of our favorite dishes to take to a gathering. It’s not traditional and the entire family loves it.

Blue Cheese Coleslaw

Slaw

  • 2 3/4 lb head of green cabbage

  • 1 Carrot

  • 1 Parsnip

  • 1 large head of radiccio

Dressing

  • 1 1/2 cups crumbled blue cheese

  • 1 1/2 cups sour cream

  • 1/4 cup distilled white vinegar

  • 1 tsp celery seeds

  • 2 tbs green Tabasco Sauce

  • 2 tsp kosher salt

  • 1 bunch of scallions

Directions

Toss all shredded veggies together in a large bowl. Whisk together 1 cup of the cheese and the remaining dressing ingredients in a separate bowl and pour this over the shredded veggies. With clean, dry hands, mix the shredded vegetables and dressing to coat well. Transfer to a serving bowl and top with the remaining 1/2 cup of blue cheese crumbles and scallions.
